Strawberry Short Cake

Makes 10-12 servings, around 120-150 cals a slice

You Need:
— 3 eggs
— pinch of salt
— 1/2 cup sugar
— 1/2 cup corn starch (aka corn flour)
— 2 tsp flour
— 1 tsp baking powder
— 1 tbs extract of choice (vanilla, anise, lemon, etc)
— lite cool whip
— low sugar or sugar free strawberry jelly (or whatever kind of preserves you want)

Make It:
1. seperate eggs. Beat eggwhites and salt w/ electric beater until stiff
2. add sugar, beat until stiff and sugar is completely dissolved
3. add yolks, beat until blended
4. sift together dry ingrediants and fold into the wet mixture w/ a rubber spatula
5. pour batter into two 8inch round tins (or 2 loaf pans or one cake pan if you don’t wanna layered cake, however you wanna do it.)
6. bake at 350* for 15-18 mins
7. let cakes cool, then spread jelly on one layer and stack them. Top w/ cool whip frosting and sprinkles or fresh fruit.
